MENJAR BLANC


Menjar blanc has been present in almost all Catalan cookbooks since the Middle Ages. This traditional dessert is even mentioned in Don Quixote, where the knight and Sancho Panza enjoy it during their visit to Barcelona.


Although it is a well-known dessert throughout Catalonia, in the Terres de l’Ebre region, it has a peculiar characteristic: the use of rice flour in its preparation. In Tortosa, with its sweet and delicate taste, it is typically consumed during Easter.


INGREDIENTS



  • 1 L of milk

  • 100 g of sugar

  • 125 g of rice flour

  • 1 cinnamon stick and ground cinnamon

  • 1 lemon peel


PREPARATION



  1. Mix the milk with the rice flour and sugar, stirring until there are no lumps.

  2. Add the cinnamon stick and the lemon peel, then place the mixture on the heat, stirring continuously.

  3. Once it begins to boil, keep stirring for 5 minutes.

  4. Remove from the heat and take out the cinnamon stick and lemon peel.

  5. Divide the mixture into individual bowls and place them in the fridge to cool.

  6. Before serving, sprinkle with ground cinnamon on top.
